Surf and Turf Ramen Recipe

I was looking for the perfect ramen recipe online recently and even though there are hundreds of amazing ones out there... I didn't fancy any of them particularly so I made my own using my favourite parts of some of them plus my own twists here and there.

So I've never written a recipe before but I guess ingredients is a good place to start.
(I made mine for 3 people and most of my measurements were just to taste/ judged by eyes or nose. I will put a rough guide of how much of everything I used though.


Meats:

  • Steak (any kind, I used thin steaks because they're better value and looked good)
  • Prawns
Other:
  • Noodles (I used whole wheat soba noodles but any will work)
  • Red Onion (1/2 a large one)
  • Spring Onion (2)
  • Ginger (a chicken nugget sized lump)
  • Chopped Garlic (1 1/2 teaspoons)
  • Sesame Seeds (a dash)
  • Red Chilli (1)
  • Mange Tout 
  • Sesame Oil
  • Soy Sauce
  • BBQ Sauce
  • Chinese 5 Spice
  • Eggs
  • Stock (I used 1 vegetable cube and 1 beef but any will work)
  • Salt and Pepper

Ok so that's everything I used but feel free to change whatever you want up.

There's a few different steps to this method so I'll split it into 4 sections 

1. Noodle broth
2. Meat
3. Garnish
4. Serving 

Before we start you're going to want to make sure you dice your red onions, garlic and ginger pretty small. 
Slice your chilis and spring onions and just wash the mange tout. 

*disclaimer* I can't spell chilli/chili so it varies throughout.

For the eggs you want them in a pan of cold water and turn the heat on when you start cooking so they can slowly heat up. Or just boil eggs however you want to.
Also pre heat your oven to a low heat. Just hot enough to not let your steak cool.

Get a massive pan (depending on how many you're cooking for) and put in approx 3L of water and your stock. Let it simmer away in the background.

I'll come back to the broth before the serving comes but for now you can just leave it to get tasty. Throw in some spices if you want.

Dash a load of sesame oil in a big old frying pan and let it get hot. Whilst you wait, rub a good amount of salt and pepper on both sides of your (room temperature) steak. Add some chilli if you like, why not.

Whack it in the pan when it's ready and leave it for 2-3 mins on either side depending how you like your steak cooked. For this particular meal I like it pretty rare but each to their own. 
Now just stick them on a tray and keep them in the oven until you're ready to slice. 


The prawns can be done however you like but I fried them in the left over steak oil and then threw them into the broth.


3. 

Garnish is the fun part that I didn't even know was necessary in ramen but once you have it this way you're not going back. 
Save the oil you fried the steak in (that's why I said "a load of" earlier) and chuck in the diced red onions, garlic, ginger and I also diced up some chilli but you can just use chilli powder if you like. 

Add some 5 spice, this is completely dependent on taste, I added about a teaspoon then a tiny bit more. Let your sense of smell decide for you. 
I also whacked some sesame seeds in at this point but it was kind of pointless because I have no idea what they did.

Let it fry for a few minutes whilst stirring and basically just wait for the onions to brown. Then add a few good dashes of soy sauce and a small blob of BBQ.

Stir it up until it's all hot then you can just leave it.



3.5.

This is an unofficial step for all the background stuff that's going on like the eggs and that.

Put your noodles into the broth that's been slowly cooking away the whole time 5-6 mins before you're ready to serve.
You can also add any extras you have at this point like the mange tout. 
Let your eggs boil to the point where they're runny but just on the edge of becoming solid. 
3-4 mins from when they start boiling to be precise (according to my mum... I just guess).

Whilst you're letting the noodles cook you can get the steak out of the oven and the fun begins.

This bit isn't actually hard but I kept forgetting what I had to add so there is potentially a better way to do this but... here's what I did.

Get a sharp knife and slice your steak into thin slices and leave them near your bowl for now.

Spoon/pour the desired amount of broth into the bowl and add some noodles. Don't forget about the prawns and mange tout swimming around in there. I just separated them and put them in the corners.

Drop in the steak along one side balanced on top of the noodles and grab the garnish we made earlier. Using a teaspoon scoop some up and slather it over the steak. It's gonna end up all mixed in the soup soon but... it looks good on the steak.

Peel your eggs, cut them in half and plop it into any space you have left in the bowl. Yolk side up.

For the finishing touch, Salt Bae style, sprinkle the spring onions and some slices of chilli over the top and DAMN, we're done.
